Hello day 18! It is still raining! YUCK! Rain, rain go away!
Breakfast cheesecake gets better everyday! For some reason, it seems sweeter everyday! Cheese for snack, Quiznos cobb salad for lunch. Revlon make up until I was blue in the face. Chicken Saute for dinner! If I haven't already given you this recipe, I will today! Oh my gosh it is delicious!
Savory Chicken Saute
2 T. extra virgin olive oil
4 boneless chicken breasts (I just use however many I want)
1 large onion, sliced
2 cloves garlic, minced
1 T. fresh rosemary leaves, chopped
1/2 cup fat-free chicken broth
Pinch of salt
Pinch freshly ground black pepper
Heat the oil in a large skillet over medium heat. Saute the chicken breasts in the oil for 4 minutes, then turn them over and add the onion. Cover and cook for 3 minutes longer, stirring occasionally. Add the garlic, rosemary, and broth. Cover and cook until the onion is tender-crisp, about 5 minutes longer, stirring occasionally. Season with salt and pepper.
It is sooooo good and sooo easy to make! The onions are great!
So another day I stepped on the scale...I am convinced that it is getting stuck. Here is the deal. I step on the scale, and it will go to one weight. I will wiggle a little, and it will move up. ??!! Which weight am I supposed to trust? I mean I know if I bounce up and down on a scale the weight will fluctuate even beyond what you weigh because of the acceleration of your body. Whoa....I really did get something out of my high school physics class..SCARY! If you are out there, please give me your opinion!
I am officially being visited by Aunt Flo. She is being very intrusive, but when is she not. I apologize for the TMI, but it is just part of me being honest with this diet blog. I am totally craving chocolate. Lucky for me I have fudgcicles because I would have totally grabbed those M&Ms at Blockbuster tonight. Oh which reminds me I have a cheat to admit to! At lunch, I ate 1/3 of the pita that came with my salad. I am telling you it is the craving that AF brings.
